THE BLACK CHOOK PINOT GRIGIO 2021

The Region

The fruit for this Pinot Grigio is from South Australia’s premium cool climate grape growing region, the Adelaide Hills which has an enviable and growing reputation for magnificent white grapes.

Due to the ideal growing season during January and February, the 2020 vintage has delivered exceptional quality and flavour.

Winemaking

Made in a Pinot Grigio style, grapes were selected for harvest when berries displayed optimal flavour and intensity. This parcel was harvested in the cool of the evening and immediately crushed at the winery to minimise colour pick up from the pink grape skins. Juice was cold settled then racked with light solids for fermentation. Post fermentation, the wine was lees stirred in tank to encourage mouthfeel and complexity.

The Wine

Lifted floral notes with pear, red apple and hints of spice, the palate is loaded with flavour, texture and a delicious acid crunch.This is a delicate and flavoursome style of wine and is beautifully suited to any occasion.
